Carnitas Enchilada Casserole

Day 2 of carnitas leftovers. “Just something James made up.” He’s offering no further details at this time, as he is currently engrossed in Moneyball. But it was really yummy, so maybe eventually he will reveal the recipe.

Quick Vegetarian Cassoulet

Realized we needed a little break from meat, so perused an old vegetarian cookbook until I found this Quick Cassoulet. Rosemary and swirl rye bread were the perfect touches. The whole house smelled yummy while it baked.

Cook a few carrots and stalks of fennel or celery and an onion in oil in skillet for 4 or 5 minutes.

Dump into casserole dish and mix in a can each of kidney beans, cannellini beans, and stewed tomatoes (with juice) and 1/4 cup veggie broth and some rosemary. (I also steamed green beans and added them in.) Top with cubed bread of your choice.

Cover with foil and bake at 425 for 20 minutes, remove foil and drizzle 1 tablespoon of melted butter over the top, and keep cooking uncovered for about 10 more minutes.

TIP: If you need meat, add prosciutto to the mix before baking.

My Memere’s recipe!

Here’s exactly what my mom had emailed me:

Cabbage and hamburg (Memere gave me this one)
 
fry 1 lb hamburg
chop a small head of cabbage up fine
chop 1 onion
Put this in a large casserole dish
Mix 1 can of tomatoes and one can of tomato soup with 1 Table spoon of vinegar and
1 Tablespoon of sugar
Pour over top and cover with foil or lid
Bake 350 for 2 hours
 
Note: We cooked this at a higher temperature for a shorter amount of time. Also note that James is very much opposed to the use of the word “hamburg” without the normal affix “er.”
