Salmon Tacos with Balsamic Greek Yogurt Tartar Sauce

James’ creation:

Salt and pepper and lightly dust flesh side of salmon in flour. Put in a hot pan with oil (we like grapeseed) for 3 minutes. Flip to skin side and cook for 3 more minutes. (Keep warm in oven if you’re still working on the rest.)

Serve fish with shredded cabbage in corn tortilla with:

Balsamic tartar sauce – mix Greek yogurt, juice of half a lemon, tablespoon sweet relish, and tablespoon balsamic vinegar.

and

Black beans with a kick – simmer a can of black beans with 2 tablespoons diced chili peppers and minced clove of garlic for 10 minutes, place in bowl and let cool, and add diced red onion, diced jalapeno pepper, diced bell pepper and cilantro.

Tip: Costco is now selling frozen wild salmon!
